Choose from a chocolate cake base or a vanilla one:
200 g dark chocolate
125 g butter
100 g flour
1 sachet of baking powder
150 caster sugar
1 pinch of salt
25 cl heavy cream or thickened cream
200 g dark chocolate
Cut the chocolate and the butter in small pieces and make it melt
Add flour and baking powder
In a bowl mix eggs yolks with sugar and pour into the chocolate mix
In another bowl beat eggs whites with salt
Pour gently in the prepared chocolate mix
Pour the mixture into the prepared cake pan
Bake in preheated oven for 25-30 minutes or until a skewer inserted in the centre of the cake comes out clean. Set aside for 2 minutes before turning onto a wire rack. Set aside for 1 3/4 hours or until completely cool.
To make the topping, place cream into a small saucepan and bring to the boil. Add chocolate and turn off the heat. Stand for 5 mins, until the chocolate is very soft, then stir until smooth. Refrigerate mixture for about 20 mins, stirring occasionally, until thickened. Spread over top and sides of cake.
Vanilla Yogurt Cake
nonstick vegetable oil spray
1 1/2 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon salt
1 cup sugar
1 tablespoon finely grated lemon zest
3/4 cup whole-milk Greek yogurt
1/2 cup vegetable oil
2 large eggs
1/2 teaspoon vanilla extract
200g butter or margarine, at room temperature
1 1/4 cups pure icing sugar, sifted
1 teaspoon vanilla essence
Preheat oven. Coat a standard (8 1/2x4 1/4") loaf pan with nonstick vegetable oil spray or butter.
Whisk 1 1/2 cups all-purpose flour, 2 teaspoons baking powder, and 3/4 teaspoon salt in a medium bowl.
Using your fingers, rub 1 cup sugar with 1 tablespoon finely grated lemon zest in a large bowl until sugar is moist.
Add 3/4 cup whole-milk Greek yogurt, 1/2 cup vegetable oil, 2 large eggs, and 1/2 teaspoon vanilla extract; whisk to blend.
Fold in dry ingredients just to blend. Pour batter into prepared pan; smooth top. Bake until top of cake is golden brown and a tester inserted into center comes out clean, 25-35 minutes.
To make the topping, using an electric mixer on medium speed mix the ingredients for the icing, beat ingredients together for 4 minutes or until light and fluffy.
